Chili Recipe:
2 cups Clover Hill 2019 Chambourcin
2 onions
4 cans fire roasted tomatoes
2 cans of green chilis
1 jar of rotel
2 jalapenos (seeds removed)
2 Pablanos (seeds removed)
2 green peppers
2 wax peppers
3 lbs. beef chip steaks
3 cans of red kidney beans
The following spices are measured with your heart:
Ground Cumin
Chili powder
Garlic powder
Onion powder
Salt
Pepper
Drizzle the veggies with olive oil and roast all the veggies until blistered and soft in a 425 degree oven. While that is happening, brown the chip steak and add the seasonings listed. Then add the wine and let simmer.
Once veggies are ready, chop and add to the chip steak. Then add the cans of fire roasted tomatoes. Drain and rinse the kidney beans and add to the pot. Let simmer for 30 to 40 minutes.
