Shrimp and Zucchini Pasta

Ingredients

8 oz. shelled raw shrimp

3 cups small cubed zucchini

8 oz. mascarpone

1/2 lemon zested

1/2 tsp. lemon juice

1/2 T. dried dill

3 cups stock

8 oz. angel hair pasta spaghetti

2 T. olive oil

Directions

Combine all ingredients. Bring to a boil.

Lower heat and cook for 15 minutes over medium heat, stirring often.

Yield: 4 servings.
