Ingredients
2 cups small cubed zucchini
2 cups halved tiny tomatoes
2 cups sliced mushrooms
3 scallions, thinly sliced
Dressing
2 cloves crushed garlic
1/4 cup olive oil
2 T. wine vinegar or Balsamic vinegar
2 T. lemon juice
1 tsp. Dijon mustard
1/4 tsp. freshly ground pepper
Directions
In a small bowl, beat together the dressing ingredients.
Add the cut zucchini, halved tomatoes, mushrooms and scallion into the bowl.
Mix well and serve.
Yield: 4 servings.
