Knights of Columbus serves fish dinners
St. John the Baptist Roman Catholic Church, 3024 S. Ruch St., Stiles, was the host site of a fish dinner March 11.
The Knights of Columbus group, called the Queenship of Mary Council 4050 from the local Catholic church, operated the well-attended event.
Although the word Knights is in the name, there were no horses or swords evident in or around the building. But the staff was large and had dedicated volunteers checking in patrons, cooking and serving the dinners. There were several teenage volunteers, too. Paris Tran and Nevaeh Curry were happy to volunteer at the dinner.
The kitchen was fully staffed by nine Knights as they labored to cook and assemble the dinners. The fish dinners included potatoes, corn, roll, homemade brownie and other baked goods for dessert. The dinners were hybrid - patrons could dine in or order takeout. Those attending seemed to enjoy the dinner and fellowship throughout the two-hour event.
Coplay Borough resident MaryBeth Schmidt opted for a takeout dinner. She said she was impressed with the organization and efficiency of the cooking and assembling of the dinners.
The Knights of Columbus is a global Catholic fraternal service order founded by the Rev. Michael J. McGivney in 1882 in Connecticut. The Knights current leader is Patrick Kelly, who is referred to as the Supreme Knight.
Membership is limited to practicing Catholic men, but women may participate in the Knights activities through the Columbiettes program and other female auxiliaries. Young boys can join a group called Columbian Squires.
