Coplay Eatery now open

A steady stream of patrons began arriving 6 a.m. Nov. 22 and continued through dinner for the long-awaited grand opening of Coplay Eatery, 1214 Chestnut St.

The new eatery replaced the former Paulie’s Restaurant, which closed due to the COVID-19 pandemic.

Originally planning to open for business in June, the operators experienced supply chain issues of items needed in the kitchen. These shortages delayed the grand opening. It also took longer than anticipated to attain full staffing.

Jim Tust, a longtime Coplay resident and former Paulies’ patron, was at Coplay Eatery 6 a.m. sharp on grand opening day. He was sipping his first coffee in the newly renovated restaurant and saying hello to other former Paulies’ customers as they arrived.

Another longtime Coplay resident, James Danko, was perusing the menu with his sister Mary Beth. Danko, who brought his appetite, was having difficulty making up his mind on what to choose.

“The selection is great,” Danko noted.

The Coplay Eatery offers a combination of Mexican and American dishes. Breakfast is served all day.

The restaurant is open 6 a.m.-9 p.m. Mondays through Saturdays and 6 a.m.-8 p.m. Sundays. There are dine-in, carryout/pickup and delivery services available.
